Lifestyle: Recipe for the weekend, coconut, beetroot, mint and basil soup

IMG_2956To send you off on your weekend with a bang, try this delicious and easy recipe perfect as either a starter or a main.

3 large beetroot

1 tin coconut milk

3 medium sized potatoes

2 sticks celery

1 carrot

1 large onion

3 cloves garlic

1 vegetable stock cube

Either a small red chilli or a teaspoon of dried

Handful of fresh basil

Small handful of fresh mint

 

Peel and chop all the veg except onion and garlic into fairly thin/small pieces and place in boiling water but don’t completely cover. Stick a lid over the top to steam any veg not resting in the water and make sure you stir it regularly.

Fry off the onion and garlic. Add a stock cube to the boiling/steaming veg along with the garlic and onion. Keep topping up with water as necessary so it doesn’t boil dry. When soft, add the herbs and blend the soup into a thick paste. Serve with a big grin. YUM!
